Indian cuisine is a rich blend of the subtle use of various Spices, Herbs and Vegetables grown all over the country, which has been known for centuries as the Land of Spices. The regional cuisines of the country have been greatly influenced by an amazing variety of dishes, cooking techniques and a pervasive practice of vegetarianism among many communities, reflecting the great ethnic diversity of the subcontinent. Interestingly the term ‘curry,’ which has come to be strongly associated with Indian cuisine, originates from the cuisine of Tamil Nadu. Curry is not a spice as believed by most people. It refers a side dish made of vegetables or meat, richly flavored with spices and condiments. The use of spices particularly of Indian origin has steadily increased and trade has been robust in the last few decades. Increasing Indian Diaspora in developed countries as well as a newly acquired taste for Indian dishes not only in Asia, but also in the western world have has been cited as reasons for the continuing demand for Indian food products all over the world.
